Pachamanca, Andean Gastronomy
3 days / 2 nights

 

 

 
 

Day 1: Lima / Concepción.
Early departure to the Central Andes (Ticlio 4818 meters above the sea level), alter crossing the highest point of this road, we go down to the Mantaro’s river valley. Here you will learn about the preparation and traditions of the Pachamanca.
Arrival to Concepción. Welcome Coca leave tisane and accommodation.

Lunch (Potatoes with Huancaina sauce and Herbs soup)
Visit of the Santa Rosa de Ocopa convent, one of the oldest that belonged to the Saint Francis order. Visit of the trout nursery in Ingenio.

At the end of the afternoon we will have a little initiation on Pachamanca. We will discover the ingredients and the tradition involving this special dish.

If you like, you can participate in the meat dressing activity

Dinner and overnight

Day 2: Pachamanca’s Day
Breakfast
Alter breakfast we will prepare every thing for cooking the Pachamanca. We will set all the pieces into the earth oven as it is prepared traditionally.
While everything is being cooked, we will visit some of the nearby towns like Cochas and San Jerónimo de Tunan, where you will discover the handicraft artisans of the Mantaro Valley.
Return to the hotel to “open” the oven
Lunch with Folk show
Time for rest.
Dinner and overnight

Day 3: Concepción / Lima

Breakfast.
We begin our return to Lima not without visiting the Paca lagoon located at Jauja, little town that was declared the Capital of the country by the Spaniards conquerors, before Lima. Lunch not included. Arrival in Lima.

End of our services.
